2020 Blanc de Blancs
Aged nearly 4 years en tirage, this wine has taken on additional richness and depth from the increased time on the lees. The wine is 100% Chardonnay grown and picked for sparkling wine and has a low dosage (3 G/L) to maintain balance and freshness. Candied lemon, pear and fresh dough aromas are backed by creamy, fine bubbles which drive the lengthy finish.
2024 Sémillon Pétillant Naturel
Sourced from the lower and cooler of the two Sémillon blocks at Les Collines Vineyard in the foothills of the Blue Mountains. Bottled towards the end of fermentation, and disgorged to remove the yeast shortly after fermentation completes, resulting in a naturally sparkling wine that is crisp, clean, and dry. Frothy and vibrant with creamy bubbles and nervy acidity. The nose presents generous aromas of yellow apple, fuyu persimmon, white flower and freshly cut hay.
2021 Blanc de Noirs
Our 2021 Blanc de Noirs was made in the traditional method, the same way as Champagne, and spent nearly 4 years aging in bottle prior to disgorgement by hand. It was worth the wait. Bottled with a low dosage of 2.75 g/L, the wine is Extra Brut in style and presents dry and textured with creamy bubbles and aromas of brioche, citrus zest, strawberry and wildflower honey. A perfect pairing for your festive holiday gatherings.
