Up to this point all of the sparkling wines that we have released have been made in the Pétillant Naturel (Pét Nat) style, but we have also been producing wine in the Méthode Traditionnelle from Champagne. We are now finally ready to release our first vintage!
Whereas Pét Nat tends to see very little aging prior to release, traditional method wines are often aged for lengthy periods of time prior to disgorgement. This particular wine spent roughly 3 years in bottle maturing, similar to the requirements for vintage Champagne. We tend to prefer a dry style, and a minimal dosage of 5 grams per liter was added at disgorgement, resulting in an Extra Brut style (the sweeter Brut style allows up to 12 grams per liter) that balances the nervy acidity from the cool French Creek site with toasty notes created by the long bottle aging and creamy, fine bubbles.
