2021 Skin Contact Semillon

In most vintages we produce both a still and sparkling wine from this vineyard, but low yields resulted in us only producing the still version in 2021.  The grapes were harvested on August 16, by far the earliest we have ever harvested, a byproduct of the extremely warm vintage.  We fermented half of the grapes on their skins for 10 days, resulting a rich and textured wine, while pressing the other half immediately to bring freshness and verve.  Aged in in concrete egg (47%) neutral oak (15%), clay amphora (23%) and stainless steel (15%)

Rich and textured with notes of lemon pith, golden apple, bergamot, beeswax, walnut and dry straw. 

100% Sémillon. 12.5% alc.
